Based on camping crew friend HS’s recipe for his excellent quick-fix kimchi* (see for example 7.109 Chicken Tikka…).

*To be explained in more detail when I post my own recipe, geotjeoli (겉절이) is a flash-pickled kimchi.

It turned out okay.  Eaten within the hour, before fermentation could develop to any meaningful depth, the flavor profile was rather shallow, more like a light salad, as geotjeoli is intended to be.  Hopefully, it’ll continue to improve upon maturation, as the one that I’d tried last weekend.  Anyway, it was a promising first attempt that will inspire further experimentation.

A few years back, I did attempt a half-assed radish kimchi (see 4.172 Ggagdugi…), but this would be the first real try.
