Couldn’t go wrong, especially with IT’s kimchi (see generally 7.210 SPAM Curry Rice), though not as good as it could be.
Need to perfect this recipe.
Mind sharing the recipe for the sauce you used, and what kind of noodles?
as noted in the post, i’m going to develop a recipe someday.
in the meantime, I always eyeball it as follows: a handful of kimchi (more sour the better, combination of leaves and stalk for contrasting textures), sliced cucumbers if available; massaged with about 2 tsp gochujang + 1 tsp sugar + 1 TBSP sesame oil; tossed with so-myeon; topped with dried laver and sesame seeds. one of the easiest, quickest, lightest late-nite snacks I can make.
