A simple Korean side dish — to the extent that something so simple can be attributed to a national cuisine — consisting of potato (gamja), thinly sliced (chae), stir-fried (bokkeum) in oil with garlic, scallion, soy sauce, salt and pepper.

  1. OMG. Thank you so much for this post. I know, probably one of your most simple posts, but gamja chae bokkeum is my ABSOLUTE favorite banchan (or entree, for me!) ever!!! How do you get the potatoes so thinly sliced? Do you use any tools, like a mandoline?

    1. yes mandoline. also be sure to soak the strips in water, which removes the surface starch, which allows for a looser stir-fry that preserves the integrity of the strips (without turning it all into a mash)…
