UK’s Farewell Wellness Lunch

Despite everyone’s urgent and desperate attempts at dissuasion, UK has accepted an assignment to be the Organization’s sole technical officer in Kiribati.  In itself a noble pursuit, perhaps, but she’s bringing her husband and two small children ages 6 and 4.

Kiribati is a Pacific island country with a population of 110,000, about 46,000 on the main island of Tarawa, the rest in the other 32 atolls scattered across 3.5 million square kilometers of ocean.

In terms most relevant to GMTD: poor soil quality = virtually no food is produced on the islands, requiring nearly everything to be imported, mostly processed junk food at ridiculous prices.  Even onions are extremely rare to come by.  Aside from the lack of schools, hospitals, playgrounds, and other essential infrastructure for children, what are they going to eat?

For dinner, I repurposed the left-overs for our family dinner.

UK has already been there on her own for the past couple months and reports that she eats instant noodles almost every meal.  

For their final weekend in Manila before relocating there together, I made them a healthy spread.

UK, YP, and I – same division, Korean (more or less), similar in age (more or less), two kids each – had grown pretty close (see most recently 7.276 LA Galbi).
