Despite appearances – I should learn how to plate this more appealingly – it was pretty good, about as good as boiled chicken can get. Even though the dish is defined by the bird, the critical part of the meal is what gets made from the remaining broth, such as porridge (juk) or noodle soup (kalguksu).
