My favorite condiment combo for cold cut sandwiches: mayo + brown mustard (or Dijon, but never ever yellow) + hot sauce (preferably sambal olek, but substitutes allowed).
I also prefer iceberg lettuce, which is sweet and crunchy. I find other types of lettuce, such as romaine, to be a tad bitter and too flabby for sandwich applications.
