Pan-Grilled Lamb Chops

The rack of lamb was sold at 1176 grams for 1293 pesos. The weight of the trimmed fat (pre-cook) – the rack had come insufficiently frenched to remove the excess fat – and leftover bones (post-cook) came out to about 680 grams, leaving about 496 grams of edible protein.
I’m beginning to wonder if I even like lamb anymore.
