Oh joy, oh bliss, The J Mart now carries lamb!  This is noteworthy in a country where access to “exotic” ingredients – anything that isn’t part of a traditional Korean recipe – is extremely limited in supermarkets, especially neighborhood stores outside of central Seoul.

The flat surface of an induction stove is super easy to clean – in fact, I can’t imagine ever again owning a gas stove that requires cleaning in between the nooks and crannies – but the shiny black glass shows all the gunk during the cooking process (sometimes, I will photoshop out small blemishes, but too much here to even bother), though I should make a better effort to wipe as I go. 

Paccheri is a type of pasta.  Starts as a large tube but collapses flat when cooked.  Often paired with meats because of its heft.
