Taking the subway home, transferring at Jamsil Station, I dropped by the mall for dinner. Gordon Ramsay Burger is closest to the entrance from the subway.

Chiptotle Dawg is a dish at Gordon Ramsay Burger. According to the menu: Stadwurst (German sausage) + vintage cheddar cheese + sauerkraut + avocado mousse + pepper relish + chipotle ketchup + jalapenos + red pepper + micro coriander + scallion.

It was disappointing. The sausage – imported from Germany, so said the server – was unremarkable, bland, leaning more towards typical Korean style than American. The “bun,” a rectangular loaf toasted on all sides and slit down the middle to hold the sausage, was greasy and sweet and too much. The toppings were a jumbled mess, weirdly salty and spicy and sweet and smoky, resulting in no discernible flavor profile. I left half of the bun and a quarter of the sausage on the plate. The sausage and especially the bread make me suspect strongly that the dish was developed in Korea by a Korean chef who’s never tasted an American hotdog – whether Gordon Ramsay tasted and approved it, who knows.

While acknowledging that the American hotdog isn’t necessarily a Platonic Ideal that chefs must adhere to, a dish that’s called “dawg” clearly is meant to suggest American street-level influence.
