Chicken Enchiladas

With leftover roast chicken from Costco.
With this latest effort, I must conclude that the enchilada simply isn’t my thing. Come to think of it, I never order enchiladas at a restaurant – the so-called enchilada at God Eat is more of a burrito (see for example 15.014 Enchilada Set). Over the years, however, I’ve been trying to make enchiladas at home because the dish seems like something I should be able to pull off, easily and quickly, with pantry ingredients, for a convenient one-pot meal. But apparently not. After using up the remaining 8 cans of enchilada sauce that I’d purchased over Amazon (see generally 16.047 Flour/Corn Chicken Enchiladas), I’ll be done with enchiladas forever.
