Gochu Deopbap is not really a thing. Just strips of bell pepper stir-fried with pork + mushrooms + onions etc in a light garlicky glaze, served over rice.

Whereas “gochu” applies broadly to any kind of chili pepper, the term usually refers to spicier varietals, not bell peppers, which are called “pimang” (green) or “paprika” (red, orange, yellow).
Which makes me suspect that a dish once existed involving spicy chili peppers but then restaurants started substituting bell peppers to appease local palates, then dropping the original name of the dish and calling it “gochu deopbap.” A common refrain on GMTD: Korean-Chinese restaurants have no sense of heritage/history regarding actual Chinese cuisine.
