For the first time in making this dish, I added cheese – slices of muenster blitzed in the food processor to approximate queso fresco.

Alas the salsa wasn’t up to par. Produced by Peacock, a food line from E-Mart. Way too sweet, otherwise flavorless. Did my best to Mexicanize it – e.g., with pickled jalapeños, chipotle sauce, ground cumin, etc. – but still fell short.

More important, with tonight’s dish – the culmination of careful meal planning over the past couple weeks – I managed to use up all ingredients in the fridge that would go bad over the next couple weeks, as I will be leaving the day after tomorrow for a scuba diving trip to Indonesia, returning on October 21. More details to come.
