Truffle Mushroom Risotto

First time making risotto from scratch in over 5 years (see most recently 11.360 Jamón Serrano).

Used Korean rice as usual – as previously discussed, arborio rice derives from the same species (see 2.066 Risotto with Pan-Seared Scallops and Golden Enoki Mushrooms) – but this particular brand wasn’t starchy enough, apparently, because the grains refused to get creamy, despite 20 minutes of constant agitation, even after the addition of enrichment butter, even after the addition of parmesan cheese.
