Ribollita is an Italian dish. It’s a soup consisting of mixed beans/vegetables and leftover bread. Humble by definition, the term means “reboiled” in Italian.

I followed a recipe from the cookbook 1 Stock, 100 Soups. Reasonably tasty and easy to make, the best part was learning a method developed by an age-old Tuscan tradition for using up bread that would otherwise be too stale/stiff to eat. In fact, to maintain some structure within the broth, the stiffer the better; toasting would be recommended if using fresh bread.
