This wasn’t really a frittata, I know. Just some potatoes and carrots, sautéed in butter and olive oil with rosemary, to which I added a beaten egg, at the last minute on a whim, and cooked on low heat until the whole thing set into a pancake. It tasted kinda like a frittata – a burnt one – or maybe I thought so because the rest of the meal was kinda Italian in character. I’m sure that some culinary tradition somewhere in the world has a name for this sort of thing. In any case, the wife and kid seemed to like it, even though I didn’t.
I should learn to make a bona fide frittata, come to think of it. Right up my alley.
