Pan-Grilled Haloumi in Spicy Tomato Sauce

Inspired by the dish that I’d experienced in Lebanon (see 9.333 Grilled Halloumi Cheese).
Alas, the cheese itself was so dry, crumbly, and salty that none of us could get past the firt nibble.
But with better quality cheese, I think this could work.
