In Italian, “orecchia di mare” is abalone.  The term means “ear (orrecchia) of the sea (di mare).”

If only they could do something about the color of the sauce.

At Festiva, the Orecchia di Mare appetizer was excellent.  Exquisitely tender abalone, pairing nicely with silky mashed potatoes, the gut sauce providing a layer of rich umami bittersweetness, plus a touch of brininess from the salmon roe.

Guremani Cellar Kvareli: red wine from Georgia, dry with a hint of spiciness, reminded me of petit sirah.
