In Korea, fish varieties in supermarkets are rather limited (see generally FISH IN KOREA), especially big fish amenable to being filleted and cooked as steaks, such as halibut, sea bass, swordfish, shark, mahi mahi.  Salmon has only recently gone mainstream (see for example 12.298 Kall Inkokt Lax).

42,990 won (for 9 fillets, each weighing about 150 g) = about 4,800 won per fillet – worth the price of membership.

As far as I’m aware, mahi mahi is only available in Korea at Costco, portion packaged and frozen under their Kirkland brand – one of the reasons that I renewed my membership recently.

3 fillets, cut lengthwise into strips, dusted with Old Bay Seasoning.

For the first application, I considered fish & chips but decided on tacos because I had fresh tomatoes and lettuce.

The bodies reserved for sandwiches, coming up soon.

While I’ve always strived to minimize food waste, it’s not really about saving money or protecting the environment, which are noble outcomes in themselves; it’s more about challenging myself to maximize the use of everything that I have, such as in a curry (see for example 7.258 Beef Curry Rice).  This time, with tacos in mind, I minced the end bits of tomatoes and turned them into pico de gallo.

Also from Costco, in order of preference: Black Cherry, Grapefruit, Lime, Mango – all very very dry, with just a hint of fruit flavor – I went with Mango for this meal.

The tacos didn’t turn out that great.  Pico de gallo was good, but the fish was underseasoned.  Sour cream and/or guacamole would’ve helped.  But a nice light meal overall.
