Beef Curry Rice

One of my favorite dishes to prepare — not as a home cook but as a home maker trying to maximize outputs from the grocery budget — Japanese-style curry with various bits and pieces of leftover veg piling up in the fridge : here, including potato, carrot, zucchini, broccoli, mushroom.
TIP : whenever using beef, or meat of any kind, first pan-sear the pieces to provide color, texture, and flavor.
