Ideally, I eat oysters (gul) when they’re in peak season during the winter, preferably wild ones (see for example 12.355 Spaghetti with Oysters).
Last weekend, W had brought some home from the supermarket. I used them to make various soups for lunch, which went undocumented. The oysters were sweet, absolutely delicious, imparting deep briny flavor to the broths.

This week, I bought farmed ones, out of curiosity. I used them today to make so myeon. The oysters were bland, somewhat funky, not very helpful for the broth – no comparison to their wild counterparts.
