Corned Beef Hash

After our trip to the Philippines a couple months back, where I had canned corned beef one time for breakfast (see generally 16.148 Deep-Fried Crispy Cod Fish with Supreme Fish Sauce), I’ve been craving it, kinda. Which is kinda curious, because I rarely ate the stuff while living there, recalling only a single occasion, as documented on GMTD (see 10.152 Corned Beef + Fried Egg + Garlic Rice). Last year, I made corned beef with a product carried over from the Philippines when we moved back to Korea, but couldn’t remember why I’d purchased it in the first place or why I’d bothered to bring it with us (see 15.214 AHQFGT Lima Mike Lima). However, canned corn beef isn’t sold in Korea (though I’d bet a Filipino market somewhere does stock it), and Amazon doesn’t ship it here.

On my recent trip to the States, I looked for canned corned beef at various supermarkets near Hahn’s house – specifically, Hormel’s Corned Beef Hash, which comes with diced potato – but could only find plain corned beef from Safeway’s Signature Select brand. As mentioned in the prior post, 80% of the world’s canned corn beef is produced in Brazil, as is the case here.

To emulate Hormel, I diced a couple potatoes and onions, sautéed them in butter, mixed in the corned beef, garnished with chopped scallions, served with steamed rice + fried egg + kimchi.
Turned out okay. The meat seemed to have a faint aroma of canned dog food, though somewhat mitigated by the kimchi.
