Following my dive trip to Indonesia last month, tonight was my second go at cooking Indonesian cuisine (see most recently 16.294 Beef Rendang).

Ingredients [clockwise from top left]: 1 TB sugar + 8 shallots + 8 cloves of garlic + 12 bird’s eye chilies + 1 tomato + 1 shrimp bouillon cube + 1 tsp MSG.
1 of 4 that was given to me by the chef.

Entirely from scratch this time, no recipe, just the memories and photos of the cooking lesson that I’d received on the boat (see generally 16.287 BBQ Squid with “My” Sambal).

Toasted, as instructed.
Looks more like a chunky pasta sauce.

The sambal turned out okay.  Not enough chilies, so it lacked punch.  MSG and shrimp bouillon made the umami way overpowering.  But respectable first attempt.

The rest of the spread was improvised, neutrally flavored items that would seem to pair with sambal.
