To do this on the regular (see most recently 17.262 Hoe Deopbap), I need to find an economical solution for sourcing the fish. In restaurants, the dish is so cheap because it comprises leftover bits and ends of sashimi that would otherwise go to waste. Mincing premium slices of sashimi to make hoe deopbap is like buying ribeye steaks and grinding them to make burgers. Well-Being Mart does offer hoe deopbap kits (just add steamed rice) at just 7,000 per bowl, but frankly the fish doesn’t look very appealing, like yesterday’s bits and ends. I should ask if they’d sell me whole slabs of sashimi at a reduced price.
