The Pizza Peel is a pizza restaurant. Owned and operated by a Canadian expat, who reportedly learned his craft in Italy, the small establishment focuses exclusively on pizza and calzone, offered on a humble one-page menu, made on-the-spot with fresh hand-tossed dough, flash-cooked in a wood-fired oven, and served on an actual pizza peel.
Excellent. The crust was among the best that I’ve ever had: light and chewy in texture, savory without a touch of grease, perfectly seasoned and full of flavor. A touch scorched on the bottom from the extreme heat of the oven, but the blackened bits added character. Reasonably priced, the customized pizza here started at 12,000 won with the addition of black olives and mushrooms each 1,000 won, for a total of 14,000 won. Definitely worth it. A fine example of the new trend in Korea of making pizza the old-fashioned way.
