It started with a “Fried Rice” spice mix tasting like seasoned garam masala, which I’d purchased at a local supermarket in Colombo last year.  The instructions on the product called for the addition of soy sauce and sesame oil, making me think that the recipe was intended to be more eastern than southern in character.

To keep the flavors southern, I didn’t add any soy sauce or sesame oil and instead steamed basmati rice with coconut powder + curry leaves + cardamom pods, also purchased in Sri Lanka.  The rice was then stir-fried with chicken breasts + egg whites + cherry tomatoes + corn + carrot + onion, and seasoned with the spices.

Turned out very well.
