Should’ve separately parboiled the halibut to flush out the fishiness, which ended up infusing the broth.  The fish itself turned out okay, any off flavors masked perhaps by the kimchi.

I saw this in person at the National Palace Museum in Taipei (see 5.111 Pork Potstickers).
