SNACK
Hungry on the way back, we stopped by Jollibee for snacks. They were wildly amused, as everyone should be, that rice comes with fried chicken in the Philippines.

DINNER
Upon our return to Manila, we went to Seafood Market & Restaurant for dinner. Becoming something of a post-dive-trip tradition, it makes perfect sense to eat seafood after swimming among the fishes all day – I wonder if cowboys like to eat steak after bringing in the herd.

Discovered a new dish that may be a candidate for the menu at the next gathering of the Korean WPRO staff: pusit adobong. Hadn’t realized that Filipino methods were available. The sharp flavors provide a distinct contrast to other dishes in the repertoire.
