Boiled Oxtail

While making a batch of ggori tang (see most recently 8.083 Ggori Tang), I take periodic samples of the meat to check if it’s achieved fall-off-the-boneness.

In its purest form – seasoned with sea salt and pepper – the deficiencies of the New Zealand-sourced oxtail become more evident – a tad shy in beef flavor, with a trace of funk, kinda dry in texture.
