Toum is a Lebanese garlic dish.  Nothing more than raw garlic + salt + lemon juice + olive oil, blitzed in a food processor to form a fluffy paste – curious how it was made before food processors.  Works as a chip dip or condiment for grilled meats.

DB’s partner, who’s Lebanese, made toum and served it with pita bread.  Stunningly good for something that tastes so simple.
