Aside from the oxtail meat, the stock is what made the dish, providing deep beef flavor and velvety texture. For seasoning, a touch of doenjang (Korean fermented bean baste, similar to Japanese miso), which added an interesting layer of nuttiness. A fine way to use leftover rice.
