Garlic Noodles with Shrimp & Broccoli

Following the initial success of this dish (see 13.071 Garlic Noodles), this second attempt scaled the portion in half and added ingredients, omitting cheese.

As previously noted, boiling the pasta in a skillet with minimal water (a) results in a better dish (because starchier water makes a thicker sauce), (b) facilitates process (because the pasta can be transferred directly into the sauce pan, no need to  reserve pasta water in a separate cup, no need to drain the pasta into a colander), and (c) simplifies clean-up (no pasta water cup to clean, no colander to clean, no big pot to clean).

It turned out well.  First, scaling down works fine – actually better, as 200 grams of pasta is easier to manage in the skillet than 400 grams.  The broccoli stems, garlic chives, and shrimp combined for a stronger Asian vibe, especially in the absence of cheese – ultimately, though, the butter and pasta make the dish feel fundamentally Italian.
