Eggplant Gratin

Eggplant Gratin was excellent.  A whole eggplant, cut lengthwise down the middle, topped with ground beef + tomato sauce + cheese, broiled, served on a bed of baby spinach.  The flavors were well-balanced.  The textures were spot on.  Though not a fan of eggplant, I enjoyed the dish immensely.
