While Bakery Lee Jong hasn’t been featured so much on GMTD these days (see most recently 12.180 Bread and Cheese (and Other Stuff), it remains without question my favorite bakery in the neighborhood.
Their ciabatta is fantastic (see for example 11.321 Clam Chowder, Delicious). This time, I cut the loaf lengthwise and toasted the halves in a dry skillet. No idea about the science behind it, but heat seems to activate some dormant ingredient that comes alive to enhance both the savoriness and chewiness of the bread – unheated ciabatta are anathema.
