One of the most basic/common Filipino dishes, which I’ve made a few times over the years, though never documented on GMTD.
Here, I used noodles purchased a few months back at Lillie Inasal, a Filipino restaurant/store (see 14.037 Chicken Inasal (+ Beef Bone Bulalo Soup)).

Pretty good. Adopting a technique learned through pad si ew (see 14.164 Pad See Ew), I parboiled the noodles then presoaked them in the sauce for a few minutes, which enhanced flavor and intensified color (though traditional pancit isn’t quite this dark – see photo on noodle packaging). Turned out more like a standard chow mein (presumably the original inspiration for the dish – hence the “Canton”).
