For our final evening together, I invited James out to dinner, along with MtG and KIT – both current restaurant owners who could appreciate chili crisp.  James opted for Japanese, given a few options near the warehouse.

Oki Sushi is now my go-to venue when hosting dinner for friends near work (see most recently 14.249 Omakase).

With hirame (fluke).
With uni (sea urchin) + ikura (salmon roe) + nori (dried laver).

Everyday Savory Chili Crisp – the basic version featured in Chili Crip – is absolutely amazing when paired with sashimi.  Because the recipe includes seasonings (e.g., soy sauce), the condiment worked on its own to provide saltiness, as well as spice – in fact, we didn’t bother using soy sauce at all.  And despite its powerful appearance, the chili crisp did not overpower the fish but enhanced its sweetness, with subtlety.  James had never thought to try it with sashimi, and he too seemed blown away.

I offered to sell them the book, but they refused and just took it for free.
