A couple variations on the theme (see most recently 14.330 Chicken & Mushrooms).
First, squash (aehobak) in lieu of mushrooms, which imparted a sweetness to the sauce – okay in a pinch, but mushrooms are preferred.
Second, after cooking the chicken fillets and setting them aside, the sauce and pasta were made in the same skillet then plated first, with the fillets placed on top, thus preserving their crispiness – definitely a better way to go – the standard technique calls for placing the chicken back into the sauce before plating, which can make the chicken kinda mushy.
