First time making my own fish & chips.

Probably would’ve done it sooner, but Korea doesn’t really have appropriate types and cuts of fish amenable to the dish. (Might’ve had better options in the Philippines, though freshness was always kinda sketchy.)

Totally improvised, the fillets were cut into strips, seasoned, dredged in flour, dipped in beer batter, deep-fried in oil, served with tartar sauce, along with shrimp (prepared in the same way) and chips (frozen, deep-fried in the same oil).

Not bad. The crust on the fish strips wasn’t quite as crispy as I would’ve liked – part of the problem was that I did them first, then the shrimp, then the chips in successive batches, so the fish got kinda cold by the time everything else was done (shoulda gone in reverse order). But the fish itself was firm yet flaky, tasty. All brought together with the tartare sauce, also improvised.
