The beef was from yesterday’s ribeye bonanza (see generally 15.127 Roast Beef au Jus).

I was inspired to make the dish from a bag of tomatoes given to us, out of the blue, by MIL – thinking of ways to use them up, pico de gallo seemed a good place to start.
