Chipotle Fried Chicken Burgers

Improvised with leftovers from a bucket of fried chicken.

Skins peeled off, meat shredded, bones discarded. 

First, the meat was marinated then lightly sautéed in butter, just enough to warm.

The skins were pan-fried in oil until crispy, drizzled with salt.

Cole slaw had been prepared hours earlier.

La Costeña Chipotle Peppers in Adobo Sauce (see also 15.200 Pulled Pork Tacos with Hand-Made Tortillas), enhanced with garlic + hot sauce + cilantro.

Excellent.  The meat was tender and flavorful.  The cole slaw added brightness and crunch.  But the kicker was the skin, which was super crispy and savory.  If I may, the burgers looked and tasted professional.
