After a disappointing first impression of Jin Ramen (11.150 Jin Ramen), I was in no hurry to repeat the experience. But then I saw a video on YouTube featuring chefs blind tasting various brands of Asian instant noodles, including Jin Ramen, which one of the participants immediately identified with glee as “the taste of my youth” – and so I decided to give it another shot, but this time with the hot (spicy) version.
Much better, though with several upgrades by me. On top of the powdered soup base, I added a few splashes of fish sauce + shakes of white pepper. In lieu of the dehydrated toppings, I added fresh cabbage + enoki mushrooms + garlic chives, and of course whole eggs. Overall, a very balanced flavor profile with a nice kick.
