On this second attempt (see previously 15.340 Chicken Marsala), the sauce was better in the ratio of 0.5 cups of wine + 2.5 cups of stock.

However, to avoid bickering between the boys over who hogged the mushrooms, I’d doubled the amount of mushrooms, but cooked them in a single batch, so they failed to brown properly and turned out kinda limp.

Third time should be the charm.
