To help maintain a safe fasting glucose level (156 mg/dL, at this very moment, about 2 hours after dinner), I’ll be reducing my intake of carbohydrates, especially white rice, bread, and pasta.
Instead, more tofu/dubu, not just as a component in a dish but as the main event itself – so, for dinner tonight, a plate of dubu jeon, inspired by a dish at Chin Chin (see 15.088 Dubu Jeon).
