As indicated in fine print on the label, the official English term for “galbisal” is “beef boneless chuck short rib.”  When sliced into thin strips for grilling, the cut is typically referred to on menus as “rib fingers” or just “rib meat.”

Bought a whole package on a whim.

Unwrapping it at home, I couldn’t quite figure out what to do with it – the muscle fibers were all crisscrossed and inconsistent.  So I carved out enough to make a “galbisal” platter for a simple meal of table-top grilling, and cut up the rest into chunks for future undetermined uses.

What I’d thought to be a single thick slab turned out to be two flaps.
