Babyback Ribs à la Enchilada

After purchasing a 12-pack of enchilada sauce back in February (see generally 16.047 Flour/Corn Chicken Enchiladas), I’ve only made 2 batches of enchiladas since (see most recently 16.113 Chicken Enchiladas).  While rearranging the kitchen cupboards this evening, I was annoyed to find 10 unused cans of the sauce taking up space.

So, I had the idea to use (half of) one as a marinade for babyback ribs.

The ribs were marinated, along with cilantro stems, for about an hour.

Not bad.  Tasted kinda Mexican.
