Steamed Abalone

A literal case of omakase (“I leave it up to you”), we just asked the chef to give us whatever she thought that we’d enjoy.

The abalone was sublime.  Simply steamed and seasoned with a touch of soy sauce, the texture was impossibly tender, while the flavor was subtle yet somehow intensely abalone, deeply umami.  Perhaps the best abalone that I’ve experienced in my life.
