The dubu kimchi at this place is good (see for example 15.287 Dubu Kimchi), so the leftover sauce always seemed wasteful.  This time, I noticed that the menu offers side servings of ramyeon noodles (e.g., to supplement a hotpot dish) and somyeon noodles (e.g., to supplement a golbaengi platter) – why not dubu kimchi?

Reminded of that time in Singapore (see 10.154 Chilli Crab Sauce Noodles).

It was awesome.  The owner-chef had gone the extra mile to add seasoned laver flakes and sesame oil, creating an enhanced flavor dynamic and depth.  Better than the dubu kimchi itself.
