In thinking of a way to use up leftover polenta (see generally 17.106 Babyback Ribs in BBQ Sauce with Creamy Polenta), I tried making it into a batter for corn dogs.

The culprit for both issues was probably the butter.   

First, even at lowered temperature, they browned way too quickly, not enough time for the sausages to warm up.

Second, although pleasantly fluffy on the inside, the outside wouldn’t get crispy.
