Back in Cycle 3, I’d made Lexington County-Style North Carolina BBQ Sauce from the cookbook Barbecue Nation (see 3.220 Grilled Chicken with Two BBQ Sauces).
This time, I didn’t follow the recipe exactly, just used lots of vinegar, as they’re wont to do in North Carolina – in fact, 3 types of vinegar: red wine + white wine + malt, which is probably not a North Carolinian thing.
