As the photo suggests, the poor babies lost their form somewhere along the way, the corn tortillas disintegrating into mush. Still, aside from the texture, it tasted like enchiladas. Not bad for a first try, especially one that was completely from scratch; even the beef was a ribeye chopped in the food processor, nearly to the point of “ground beef” but stopping short so as to leave a bite. In fact, the chewy chunks of meat provided a bit of counterpoint to the mushiness of the tortillas.
