Like meatloaf, macaroni & cheese is one of those American comfort foods that have never given me much comfort.   Hard to believe that people (Americans) eat it as a main course.

Despite my general dislike of the dish, I made a batch to use up leftover cheese that I had from the weekend.  I followed a recipe entitled “The World’s Best Macaroni & Cheese” from bigoven.com.  I used different cheeses but followed the methodology.  Unfortunately, the result didn’t live up to name of the recipe.  I don’t think that the cheese was the problem.  It was probably the eggs, which kinda turned out crumbly in the end.  A drizzle of Tapatio hot sauce made the whole thing passable.
